Abstract

Tempeh fermentation is a biochemical process that is very sensitive to changes in temperature and relative humidity (RH). Mold or the fungus genus Rhizopus sp. as a tempeh fermentation agent, can only grow optimally at a temperature of 30–37°C and a humidity of 60–80%RH. Deviations from the temperature and humidity parameter ranges can cause fermentation failure, contamination by pathogenic bacteria, or a decrease in the nutritional quality of tempeh. Conventional techniques that rely on the experience of tempeh Micro, Small, and Medium Enterprises (MSMEs) often result in inconsistent product quality. This study designs and simulates an Internet of Things (IoT) system based on an ESP32 microcontroller for real-time monitoring and automatic (closed-loop) control of the tempeh fermentation process. This system integrates a DHT22 sensor to collect temperature and humidity data, a relay module to control actuators such as heaters, humidifiers, and fans, as well as the Blynk cloud platform for user interfaces and ThingSpeak with the MQTT protocol for time-series data storage and analytics. Simulation results show that the system is able to maintain temperature stability within ±0.5°C of the optimal set-point of 34°C and humidity within ±2%RH of the set-point of 70%RH. Data transmission latency from the device to the cloud averaged 1.2 seconds, with an MQTT transaction success rate of 98.5%. The implementation of hysteresis (dead-band) control logic in the relay successfully prevented oscillation (chattering) in the actuator, which is expected to extend the lifespan of the electromechanical components. The simulation in this study offers a cost-effective, scalable, and easily adopted solution for tempeh MSMEs to maintain consistent product quality.
